Focker's Confetti Chili
Ingredients
2 T olive oil
1 small onion - diced
2 cloves garlic - minced
4-pack of Westpac beef patties
28 oz can Tuttorosso crushed tomatoes with basil
14.5 oz can Red Pack diced tomatoes
1 cup chopped red pepper
1 cup chopped green pepper
2 T chili powder
2 T apple cider vinegar
15.5 oz can Goya Canary Beans (Frijoles Canarios)
15.5 oz can Goya Pink Beans (Habichuelas Rosadas)
Instructions
Saute onions in olive oil until limp, approximately 5 minutes. Add garlic & beef patties and chop madly with a wooden spoon or kitchen implement of your choice to break the beef patties into chunks. Cook until beef is brown.
Add crushed tomatoes, diced tomatoes, red & green peppers, chili power and apple cider vinegar. Bring to a boil, then reduce heat. Cover and simmer for 20 minutes to blend flavors. Drain Canary & Pink beans and add to pot. Cook for another 20 minutes or so. Eat.
This recipe feeds six hungry people for about $5 bucks. If you don't have 6 hungry people to feed, the leftovers make a durned fine sauce for Chili Mac. This is a wimpy chili so, if you like it hot, add chili peppers, jalapeno peppers, cayenne and/or Tabasco sauce to taste.
